Mandagery Creek Venison

Over Christmas 2009 I visited Australia to inspect and speak with the principle of Mandagery Creek Venison, Mr Tim Hansen, about his fantastic Venison program and some of the technical aspects of producing the famous Mandagery Creek Venison.

Tim’s farm is based on the foothills of Mount Canobolas and these naturally rich pastures, just three and-a-half hours west of Sydney, provide the best possible environment for producing tender, consistently high quality venison. Along with his father Andrew, they have been breeding Deer for the past 25 years on their 1500acre combined farms, Rockland and Cockatoo.

Zhu's Trip

The Hansen’s Red Deer origin is from Eastern Europe and they conduct an annual breeding program with fawns being born in the spring and held on farm until they are ready for processing (anywhere between 12 to 24 months of age).

Mandagery Creek Venison is committed to providing healthy, sustainable growing conditions for deer. All animals are free-range on natural and improved pastures and are grazed within a holistic farming framework. Additional Supplementary feeding is sometimes employed and involves the use of grains such as barley which provides protein and on farm silage which sustains energy levels in the Deer.

Handling of the Deer is kept to a minimum due to their natural ability to be self sufficient. This also acts to ensure tenderness of the product as the deer are less likely to be stressed in preparation for processing.

From a local Chinese perspective Deer / Venison is seen as a healthy alternative providing longevity to ones life. This I believe is a fantastic way in which we can present Venison to our customers here in China.
